Let’s cook up some authentic Carbonara!!

4 egg yolks
1/4 cup parmigiana reggiano, freshly shredded
1/4 pecorino romano, freshly shredded
1/2 cup of guanciale, diced (reserve fat)
1 tablespoon freshly cracked peppercorn
8oz bucatini pasta
1 tablespoon of salt

Bring your pasta water to a boil, add salt and pasta. Toast your peppercorns sit them aside. Then cook your guanciale and set aside. Keep the fat as well. Then in a clean bowl whisk egg yolks with cheese, pepper, and guanciale fat. When pasta is ready add pasta to egg mixture and toss! Add pasta water as needed to make it saucy.( but not to much you don’t want this sauce to be runny just creamy.) Add some of the guanciale to the bowl and toss. Serve with extra sauce, guanciale, and Parmesan!

this is what we're making today carbon
now this is an authentic carbon
let's make the same none of the heavy cream stuff i'm talking parmesan
pecorino romano
and not pancetta
today we're using one charlie
now vaughn charlie is different
you don't need oil or any of that and you just don't watch rye don't
let it get crispy
they get hot
you want to toast your pepper
just a little bit till they give fragrant
once you've played enough you want to get the parmesan
go ahead and dow sit on top
and you can put as much
this is what i call an authentic
you wouldn't worked up an appetite
